Tinolang Manok
Jeffrey Manila
In José Rizal's first novel, Noli Me Tangere, Kapitan Tiago served the
“tinola” to Crisostomo Ibarra upon arriving from Europe. He was given the breast,
to the dismay of the corrupt Spanish friar, Padre Damaso, who got chicken neck,
which is considered to be the least favored chicken part. Dr. Jose Rizal used
"tinola" to show how the Spaniards respond ragefully and arrogantly when they are
served with inequality - which they are using to abuse humiliate and discriminate
the Filipino people.
